The facility serves the group's flagship establishments—Cucina Higala, Ricardo's by Cucina Higala, and Ricardo's Catering—and was developed in response to the growing challenge of managing food waste from its largest restaurant operations.

With an average of 52 kilograms of food waste generated daily, the group faced increasing concerns related to limited food waste collection services, the environmental impact of conventional disposal methods, and the long-term consequences of improper waste management. Determined to find a sustainable solution, Higala Group adopted Black Soldier Fly technology, utilizing the larvae of the Black Soldier Fly, a non-pest insect capable of efficiently consuming organic food waste.

Through this natural waste management process, food waste is converted into valuable by-products, including protein-rich chicken feed, organic fertilizer, and foliar fertilizer.
